  • 1 lb Boneless, skinless chicken thighs
  • 1 tsp Salt
  • 1 tsp Black pepper
  • 2 tbsp Olive oil
  • 1 medium Yellow onion, diced
  • 2 medium Bell peppers (mixed colors), sliced
  • 3 cloves Garlic cloves, minced
  • 1 28 oz can Crushed tomatoes
  • 2 tbsp Tomato paste
  • 1 cup Chicken broth
  • 1 tsp Dried oregano
  • 1 tsp Dried basil
  • 0.5 tsp Red chili flakes (optional)
  • 2 tbsp Fresh parsley, chopped
  • 4 whole Sub rolls
  • 1 cup Mozzarella cheese, shredded
  • 0.5 cup Grated Parmesan cheese

Directions

Step 1

Season the chicken thighs with salt and black pepper on both sides.

Step 2

Heat olive oil in a large skillet over medium-high heat. Add the chicken thighs and sear for 3-4 minutes on each side until golden brown. Remove the chicken and set aside.

In the same skillet, add the diced onion and sliced bell peppers. Sauté for 5 minutes until softened.
