Ingredients

  • 2 pieces Boneless, skinless chicken breasts
  • 2 tablespoons Olive oil
  • 1 teaspoon Ground cumin
  • 1 teaspoon Chili powder
  • 1 teaspoon Garlic powder
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 4 pieces Flour tortillas (large)
  • 1.5 cups Cheddar cheese, shredded
  • 1 cup Black beans, drained and rinsed
  • 1 cup Tomatoes, diced
  • 0.5 cup Red onion, finely diced
  • 0.25 cup Cilantro, chopped
  • 1 tablespoon Lime juice
  • 0.5 cup Sour cream
  • 1 piece Jalapeño, finely chopped (optional)

Directions

Step 1

Heat a large skillet over medium heat and add the olive oil.

Step 2

Season both sides of the chicken breasts with cumin, chili powder, garlic powder, salt, and pepper.

Cook the chicken breasts in the skillet for about 5-7 minutes per side, or until fully cooked and no longer pink inside. Remove from heat and let rest for 5 minutes before shredding with forks.
