  • 2 cups Cooked white or brown rice
  • 1 cup Canned black beans (drained and rinsed)
  • 1 cup Shredded cheddar or Mexican blend cheese
  • 8 pieces Large flour tortillas
  • 0.5 cup Salsa
  • 0.5 cup Sour cream (optional)
  • 2 tbsp Fresh cilantro (chopped, optional)

Directions

Step 1

Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper or lightly grease it.

Step 2

Dice the chicken breasts into small, bite-sized pieces.

In a large skillet, heat the olive oil over medium-high heat. Add the diced chicken to the skillet.
