Ingredients

  • 1 lb Ground chicken
  • 0.5 cup Panko breadcrumbs
  • 1 large Egg
  • 1 tsp Garlic powder
  • 1 tsp Onion powder
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 1 tbsp Olive oil
  • 4 Hamburger buns
  • 1 cup Diced fresh pineapple
  • 1 cup Diced fresh mango
  • 0.5 cup Diced red bell pepper
  • 2 tbsp Chopped fresh cilantro
  • 1 tbsp Lime juice
  • 0.25 tsp Salt (for salsa)

Directions

Step 1

In a mixing bowl, combine the ground chicken, panko breadcrumbs, egg, garlic powder, onion powder, 0.5 tsp salt, and black pepper. Mix well until evenly combined.

Step 2

Divide the mixture into 4 equal portions and shape each into a patty about 1/2 inch thick.

Step 3

Heat the olive oil in a non-stick skillet or grill pan over medium heat. Add the chicken patties and cook for 6-7 minutes on each side, or until the internal temperature reaches 165°F (74°C). Remove from heat and set aside.

Step 4

While the patties are cooking, prepare the fresh fruit salsa. In a medium bowl, combine the diced pineapple, diced mango, red bell pepper, cilantro, lime juice, and 0.25 tsp salt. Mix well and set aside.

Toast the hamburger buns lightly if desired.
