Ingredients

  • 2 pieces Chicken breast
  • 2 cups Broccoli florets
  • 4 cups Mixed salad greens

  • 0.5 medium Red onion
  • 3 tablespoons Olive oil
  • 2 tablespoons Lemon juice
  • 1 teaspoon Honey
  • 1 teaspoon Dijon mustard
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 tablespoon Olive oil (for cooking)

Directions

Step 1

Heat 1 tablespoon of olive oil in a skillet over medium heat.

Step 2

Season chicken breasts lightly with salt and black pepper, then cook for 6-7 minutes on each side, or until fully cooked and golden brown. Remove from heat and let rest for 5 minutes before slicing into thin strips.

Step 3

While the chicken is cooking, bring a small pot of water to a boil. Blanch the broccoli florets for 1-2 minutes until bright green and tender-crisp, then immediately transfer them to a bowl of ice water to stop the cooking. Drain and set aside.
