  • 2 cups Chicken broth
  • 1 cup Heavy cream
  • 1 cup Parmesan cheese (grated)
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 1 teaspoon Italian seasoning
  • 0.25 teaspoon Red pepper flakes
  • 2 tablespoons Fresh parsley (chopped)
  • 0.5 teaspoon Lemon zest (optional)

Directions

Step 1

Bring a large pot of water to a boil and add a generous pinch of salt. Cook the penne pasta according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.

Step 2

While the pasta cooks, heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Season the chicken breasts with 1/2 teaspoon of salt, 1/4 teaspoon of black pepper, and the Italian seasoning. Add the chicken to the skillet and cook for 5-6 minutes on each side, or until golden brown and cooked through. Remove the chicken from the skillet, let it rest for a few minutes, then slice it into thin strips.

Step 3

In the same skillet, heat the remaining tablespoon of olive oil. Add the broccoli florets and cook for 4-5 minutes, stirring occasionally, until they are bright green and slightly tender. Remove the broccoli and set aside.
