Ingredients

  • 1.5 pounds boneless, skinless chicken breasts
  • 4 cups broccoli florets
  • 2 cups cheddar cheese, shredded
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup sour cream
  • 0.5 cup milk
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup plain breadcrumbs
  • 2 tablespoons unsalted butter, melted
  • 4 cups cooked white or brown rice (optional)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Grease a 9x13-inch casserole dish with non-stick cooking spray or a light coating of oil.

Step 3

Bring a large pot of water to boil. Add the broccoli florets and blanch them for 2-3 minutes until bright green and slightly tender. Drain and set aside.

Season the chicken breasts with salt, pepper, garlic powder, and onion powder. Cut the chicken into bite-sized cubes.

Heat a large skillet over medium heat and lightly grease with oil. Cook the chicken cubes for 5-7 minutes until no longer pink in the center. Remove from heat and set aside.
