Ingredients

  • 12 oz Bow tie pasta
  • 2 large Chicken breast
  • 3 cups Broccoli florets
  • 1.5 cups Cherry tomatoes (halved)
  • 0.5 cup Red onion (thinly sliced)
  • 0.5 cup Mayonnaise
  • 0.5 cup Greek yogurt
  • 2 tbsp Lemon juice
  • 1 tbsp Honey
  • 2 tsp Dijon mustard
  • 1 tsp Garlic powder
  • 1 tbsp Olive oil
  • 1 tsp Salt
  • 0.5 tsp Black pepper

Directions

Step 1

Cook the bow tie pasta according to the package instructions in a large pot of salted boiling water until al dente. Drain the pasta and rinse it under cold water to stop the cooking. Set aside.

Step 2

While the pasta cooks, heat 1 tablespoon of olive oil in a skillet over medium-high heat. Season the chicken breasts with a pinch of salt and pepper, then cook them for 6-7 minutes on each side or until cooked through. Remove from heat and let them rest for 5 minutes before slicing into bite-sized pieces.
