  • 4 pieces Chicken breasts
  • 1 cup Coconut milk
  • 2 tablespoons Fish sauce
  • 1 tablespoon Brown sugar
  • 2 tablespoons Fresh lime juice
  • 3 cloves Garlic cloves, minced
  • 1 tablespoon Fresh ginger, grated
  • 2 tablespoons Green curry paste
  • 2 tablespoons Vegetable oil
  • 2 leaves Kaffir lime leaves (optional)
  • 2 tablespoons Fresh cilantro, chopped
  • 2 stalks Green onions, sliced
  • 1 piece Red chili, sliced (optional)
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Place the chicken breasts on a cutting board and season both sides with salt and black pepper. Set aside.

Step 2

In a medium bowl, whisk together the coconut milk, fish sauce, brown sugar, lime juice, minced garlic, grated ginger, and green curry paste to create the sauce.

Step 3

Heat the vegetable oil in a large skillet or frying pan over medium heat. Once hot, add the chicken breasts and sear for about 3 minutes per side, or until lightly golden. Remove from the skillet and set aside.

Step 4

In the same skillet, add the prepared sauce mixture and stir. If using kaffir lime leaves, add them to the sauce for extra flavor.
