Ingredients

  • 4 pieces Chicken breasts
  • 2 large caps Portabella mushrooms
  • 2 tablespoons Olive oil
  • 2 tablespoons Butter
  • 3 cloves Garlic cloves, minced
  • 1 cup Chicken broth
  • 1 cup Heavy cream
  • 0.5 cup Parmesan cheese, grated
  • 1 tablespoon All-purpose flour
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Fresh parsley, chopped

Directions

Step 1

Season the chicken breasts with salt and black pepper on both sides.

Step 2

Heat 1 tablespoon of olive oil and 1 tablespoon of butter in a large skillet over medium-high heat.

Step 3

Sear the chicken breasts for 4-5 minutes on each side until golden brown. Remove them from the skillet and set aside.

Step 4

Reduce the heat to medium and add the remaining olive oil and butter to the skillet.

Step 5

Slice the portabella mushrooms into thin strips and add them to the skillet. Sauté for 5-6 minutes until softened and browned.

Step 6

Add the minced garlic to the mushrooms and cook for an additional minute, stirring frequently.

Step 7

Sprinkle the flour over the mushrooms and stir well to coat evenly. Cook for 1 minute to eliminate the raw flour taste.

Step 8

Gradually pour in the chicken broth, stirring continuously to create a smooth sauce.

Step 9

Add the heavy cream and grated Parmesan cheese to the skillet. Stir until the cheese is melted and the sauce is creamy.

Step 10

Return the seared chicken breasts to the skillet, nestling them into the sauce.

Step 11

Cover the skillet and simmer on low heat for 10-12 minutes, or until the chicken is fully cooked and the internal temperature reaches 165°F (74°C).

Step 12

Garnish with freshly chopped parsley and serve hot. Pair with steamed vegetables, rice, or mashed potatoes for a complete meal.
