  • 4 pieces Boneless, skinless chicken breasts

  • 1 piece Shallot, finely chopped
  • 1 cup Heavy cream
  • 1 teaspoon Fresh thyme leaves
  • 1 cup Dry white wine
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 2 tablespoons Fresh parsley, chopped (for garnish)

Directions

Step 1

Place the dried porcini mushrooms in a bowl and pour 1 cup of hot chicken broth over them. Let them soak for 15 minutes, then drain through a fine mesh sieve, reserving the soaking liquid. Chop the mushrooms finely and set aside.

Step 2

Pat the chicken breasts dry with paper towels, then season both sides with salt and ground black pepper.
