  • 2 cloves garlic cloves (minced)
  • 2 cups mushrooms (sliced)
  • 1 cup Madeira wine
  • 0.5 cup chicken stock
  • 4 sprigs fresh thyme
  • 0.25 cup heavy cream
  • 2 tablespoons fresh parsley (for garnish)

Directions

Step 1

Season the chicken breasts with salt and black pepper on both sides.

Step 2

Dredge each chicken breast lightly in all-purpose flour, shaking off any excess.

Step 3

Heat the olive oil and 1 tablespoon of butter in a large skillet over medium-high heat.

Step 4

Sear the chicken breasts for 3-4 minutes on each side until golden brown. Remove them from the skillet and set aside.

Reduce the heat to medium and add the remaining 1 tablespoon of butter to the skillet.
