Ingredients

  • 4 pieces Boneless, skinless chicken breasts
  • 3 sprigs Fresh rosemary
  • 2 pieces Lemons
  • 3 cloves Garlic cloves, minced
  • 1 cup Chicken broth
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Rinse the chicken breasts under cold water and pat them dry with paper towels.

Step 2

Season both sides of the chicken breasts with salt and black pepper.

Step 3

Heat the olive oil in a skillet over medium-high heat. Sear the chicken breasts for 2-3 minutes on each side until they are golden brown. This step is optional but adds extra flavor.

Step 4

Place the chicken breasts in the crock pot in an even layer.

Step 5

Peel and mince the garlic cloves, then scatter the minced garlic over the chicken breasts.

Step 6

Wash the lemons and slice one of them into thin rounds. Juice the second lemon and set the juice aside.

Step 7

Top the chicken with the lemon slices and fresh rosemary sprigs.

Step 8

Pour the chicken broth and lemon juice into the crock pot around the chicken breasts.

Step 9

Cover the crock pot and set it to cook on low for 6-7 hours or high for 3-4 hours, or until the chicken is fully cooked and tender.

Step 10

Serve the chicken breasts with the juices from the crock pot drizzled over them. Garnish with additional fresh rosemary if desired.
