Ingredients

  • 4 pieces Chicken breasts, boneless and skinless
  • 2 tablespoons Olive oil
  • 2 cloves Garlic, minced
  • 2 tablespoons Fresh parsley, chopped
  • 1 tablespoon Fresh thyme, chopped
  • 1 teaspoon Fresh rosemary, chopped
  • 1 cup Panko breadcrumbs
  • 1 cup Parmesan cheese, grated
  • 2 tablespoons Butter, melted
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper, freshly ground
  • 0.5 cup Chicken broth

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a baking dish with a little olive oil and set aside.

Step 2

Use a sharp knife to slice each chicken breast horizontally to create a pocket for the stuffing. Be careful not to cut all the way through.

Step 3

In a medium bowl, combine the minced garlic, parsley, thyme, rosemary, breadcrumbs, Parmesan cheese, melted butter, salt, and black pepper. Mix well until the stuffing comes together.

Carefully spoon the stuffing mixture into the pocket of each chicken breast. Use toothpicks to secure the edges if necessary to keep the stuffing in place.

Remove the chicken from the oven and let it rest for 5 minutes before serving. Discard the toothpicks if used.
