Ingredients

  • 4 pieces boneless, skinless chicken breasts

  • 0.5 teaspoon black pepper
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 medium shallot, finely minced
  • 2 cloves garlic, minced
  • 0.5 cup white wine
  • 0.75 cup chicken stock
  • 0.25 cup heavy cream
  • 2 tablespoons Dijon mustard
  • 2 tablespoons fresh tarragon leaves, chopped
  • 1 tablespoon lemon juice

Directions

Step 1

Season both sides of the chicken breasts with salt and pepper.

Step 2

Heat the olive oil in a large skillet over medium-high heat.

Add the chicken breasts to the skillet and sear for 4-5 minutes on each side, or until golden brown. Remove the chicken breasts from the skillet and set aside; they don’t need to be fully cooked at this stage.

Reduce the heat to medium. Add the butter to the same skillet, then stir in the minced shallot and garlic. Sauté for 1-2 minutes, or until the shallot is translucent and fragrant.

Deglaze the pan with white wine, scraping up any browned bits from the bottom of the skillet with a wooden spoon. Let the wine reduce by half, about 2-3 minutes.
