Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 tablespoon unsalted butter
  • 1 cup fresh blueberries
  • 1 cup chicken broth
  • 2 tablespoons honey
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon fresh thyme leaves
  • 1 teaspoon cornstarch
  • 1 tablespoon water

Directions

Step 1

Season the chicken breasts on both sides with salt and black pepper.

Step 2

Heat olive oil in a large skillet over medium-high heat. Add the chicken breasts to the pan and sear until golden brown, about 4-5 minutes per side. Remove the chicken from the skillet and set aside.

Step 3

In the same skillet, reduce the heat to medium and add the unsalted butter. Once melted, add the fresh blueberries and cook for 2 minutes until they begin to break down slightly.

Step 4

Stir in the chicken broth, honey, balsamic vinegar, and fresh thyme leaves. Bring the mixture to a simmer.

Step 5

Return the chicken breasts to the skillet, reduce the heat to low, and spoon the blueberry mixture over the top. Cover and cook for 10-12 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).

Step 6

In a small bowl, mix the cornstarch with water to create a slurry. Stir this into the sauce to thicken slightly, cooking for another 1-2 minutes.

Step 7

Remove the pan from the heat. Serve the chicken breasts topped with the blueberry sauce, alongside your favorite sides such as rice, roasted vegetables, or a fresh green salad.
