Ingredients

  • 4 pieces Boneless, skinless chicken breasts
  • 1 cup Fontina cheese, shredded
  • 0.5 cup Marinated artichoke hearts, chopped
  • 0.333 cup Sun-dried tomatoes, chopped
  • 2 tablespoons Fresh parsley, chopped
  • 2 cloves Garlic, minced
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 0.5 teaspoon Paprika
  • 8 pieces Toothpicks

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Using a sharp knife, cut a pocket into the thickest part of each chicken breast, being careful not to slice all the way through.

Step 3

In a medium bowl, mix together the shredded fontina cheese, chopped artichoke hearts, chopped sun-dried tomatoes, parsley, and minced garlic.

Step 4

Season the cheese mixture lightly with salt and pepper, and spoon equal amounts into each chicken pocket.

Step 5

Secure the openings with 2 toothpicks per breast to close the pockets and hold the stuffing in place.

Step 6

Season the outside of the chicken with salt, pepper, and paprika on both sides.

Step 7

Heat olive oil in a large oven-safe skillet over medium-high heat.

Step 8

Sear the stuffed chicken breasts for 2-3 minutes per side, until golden brown.

Step 9

Transfer the skillet to the preheated oven and bake for 18-20 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).

Step 10

Carefully remove the chicken from the oven and let rest for 5 minutes before removing the toothpicks.

Step 11

Serve warm and garnish with additional parsley if desired.
