Ingredients

  • 4 pieces Boneless, skinless chicken breasts
  • 120 grams Goat cheese
  • 60 grams Sun-dried tomatoes, finely chopped
  • 10 grams Fresh basil leaves, chopped
  • 2 cloves Garlic, minced
  • 2 tablespoons Olive oil
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 8 pieces Toothpicks

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Carefully butterfly each chicken breast by slicing it horizontally, but not all the way through, so it opens like a book.

Step 3

In a small bowl, mix the goat cheese, chopped sun-dried tomatoes, fresh basil, and minced garlic until thoroughly combined.

Step 4

Divide the goat cheese mixture into four portions and spoon one portion onto the center of each butterflied chicken breast. Spread it evenly but leave a gap near the edges for folding.

Step 5

Fold the chicken breast back into its original shape, fully enclosing the filling. Use toothpicks to secure the edges and prevent the filling from leaking out during cooking.

Step 6

Brush the outside of each chicken breast lightly with olive oil. Sprinkle with paprika, salt, and black pepper for seasoning.

Step 7

Heat a large oven-safe skillet over medium-high heat and add 1 tablespoon of olive oil. Once hot, sear the stuffed chicken breasts for 2-3 minutes on each side until golden brown.

Step 8

Transfer the skillet to the preheated oven and bake for 20 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).

Step 9

Carefully remove the toothpicks before serving. Let the chicken rest for 5 minutes before slicing and plating. Serve warm with your favorite sides, such as roasted vegetables or a fresh salad.
