Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
Season the chicken breasts with salt and black pepper on both sides.
Heat olive oil in a large skillet over medium heat. Add chicken breasts and sear for 3–4 minutes on each side until lightly golden. Remove and set aside to cool slightly.
