Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 1 large yellow onion, finely diced
  • 3 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 2 teaspoons black pepper, freshly ground
  • 1 teaspoon salt
  • 1 tablespoon flour (optional, for thickening)
  • 2 tablespoons fresh parsley, chopped (for garnish)

Directions

Step 1

Season the chicken breasts with 1 teaspoon of salt and 1 teaspoon of black pepper on both sides.

Step 2

Heat 1 tablespoon of olive oil and 1 tablespoon of butter in a large skillet over medium-high heat. Once hot, sear the chicken breasts for 4-5 minutes per side until golden brown. Transfer the chicken to a plate and set aside.

Step 3

In the same skillet, reduce the heat to medium and add the remaining tablespoon of olive oil and butter. Add the diced onion and sauté for 3-4 minutes until softened.

Step 4

Stir in the minced garlic and cook for an additional 30 seconds until fragrant.

Step 5

Pour in the chicken broth, scraping the bottom of the pan to release any browned bits. Bring to a simmer.

Step 6

Reduce the heat to low and stir in the heavy cream and remaining 1 teaspoon of black pepper. Let the sauce simmer gently for 4-5 minutes, stirring occasionally.

Step 7

If you prefer a thicker sauce, whisk the optional tablespoon of flour with 2 tablespoons of water to make a slurry, then stir it into the sauce and cook for another minute until thickened.

Step 8

Return the chicken breasts to the skillet, spoon the sauce over them, and cover with a lid. Simmer on low heat for 10-12 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).

Step 9

Remove the skillet from heat and garnish with fresh chopped parsley before serving.

Step 10

Serve the chicken breasts with the pepper sauce drizzled on top. Pair with mashed potatoes, rice, or steamed vegetables for a complete meal.
