  • 4 pieces chicken breasts
  • 3 tablespoons extra virgin olive oil

  • 200 grams cherry tomatoes, halved
  • 100 milliliters dry white wine
  • 2 tablespoons fresh parsley, chopped
  • 1 teaspoon fresh oregano leaves
  • 1 teaspoon sea salt
  • 0.5 teaspoon freshly ground black pepper

Directions

Step 1

Place the chicken breasts between two pieces of parchment paper or plastic wrap. Using a meat mallet or rolling pin, gently pound the chicken to an even thickness of about 1/2 inch.

Step 2

Season both sides of the chicken breasts with sea salt and freshly ground black pepper.

Step 3

Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Once the oil is shimmering, add the chicken breasts to the skillet. Cook for 4-5 minutes on each side, or until golden and cooked through (internal temperature should reach 165°F/74°C).
