Ingredients

  • 4 pieces Chicken breasts (boneless, skinless)
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 1 teaspoon Garlic powder
  • 2 tablespoons Olive oil
  • 1 cup Hot pepper jelly
  • 2 tablespoons Apple cider vinegar
  • 1 tablespoon Unsalted butter
  • 2 tablespoons Fresh parsley (chopped, for garnish)

Directions

Step 1

Pat the chicken breasts dry with paper towels. Season both sides with salt, black pepper, and garlic powder.

Step 2

Heat olive oil in a large skillet over medium-high heat. When the oil shimmers, add the chicken breasts to the pan.

Step 3

Cook the chicken for 5-6 minutes on each side, or until they are golden brown and cooked through (internal temperature should reach 165°F/74°C). Remove the chicken from the skillet and set aside on a plate, tented with foil to keep warm.

Step 4

Lower the heat to medium and add the hot pepper jelly, apple cider vinegar, and unsalted butter to the skillet. Stir until the butter is melted and the sauce is smooth, about 2 minutes.

Step 5

Return the chicken breasts to the skillet and spoon the glaze over them, ensuring they are well coated. Let the chicken simmer in the sauce for an additional 2-3 minutes, turning occasionally to soak up the glaze.

Step 6

Transfer the glazed chicken breasts to a serving platter. Drizzle any extra sauce from the skillet over the top.

Step 7

Garnish with chopped fresh parsley and serve immediately with your favorite sides, such as steamed vegetables, rice, or mashed potatoes.
