Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 0.5 cup all-purpose flour
  • 3 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 2 cups baby bella mushrooms, sliced
  • 2 small shallots, finely chopped
  • 3 cloves garlic cloves, minced
  • 0.5 cup dry white wine
  • 0.5 cup chicken broth
  • 0.5 cup heavy cream
  • 1 teaspoon fresh thyme leaves
  • 2 tablespoons fresh parsley, finely chopped

Directions

Step 1

Season the chicken breasts on both sides with salt and black pepper.

Step 2

Lightly dredge the chicken breasts in flour, shaking off any excess.

Step 3

Heat a large skillet over medium-high heat. Add 2 tablespoons of butter and 2 tablespoons of olive oil.

Step 4

Sear the chicken breasts for about 4-5 minutes per side, or until golden brown and cooked through. Transfer the chicken to a plate and tent with foil to keep warm.

Step 5

In the same skillet, add the remaining tablespoon of butter. Stir in the mushrooms and cook for 5-6 minutes until softened and golden brown.

Step 6

Add the shallots and garlic to the skillet and sauté for 1-2 minutes, or until fragrant.

Step 7

Pour in the white wine, scraping up any browned bits from the bottom of the pan. Let the wine reduce by half, about 3 minutes.

Step 8

Stir in the chicken broth and thyme leaves. Cook for 2-3 minutes to allow the flavors to combine.

Step 9

Reduce the heat to low and stir in the heavy cream. Let the sauce simmer for 4-5 minutes until slightly thickened.

Step 10

Return the chicken breasts to the skillet, spooning the sauce over them to coat. Simmer for an additional 2-3 minutes to warm through.

Step 11

Garnish with freshly chopped parsley and serve immediately. This dish pairs beautifully with mashed potatoes, rice, or steamed vegetables.
