Ingredients

  • 4 pieces Chicken thighs or drumsticks (bone-in, skin-on)
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Cooking oil (vegetable or peanut)
  • 2 inches Fresh ginger (sliced into thin coins)
  • 4 cloves Garlic cloves (smashed)
  • 3 pieces Star anise
  • 3 tablespoons Soy sauce
  • 1 tablespoon Dark soy sauce
  • 1 tablespoon Brown sugar
  • 1.5 cups Chicken stock
  • 2 stalks Scallions (sliced for garnish)
  • 2 cups Cooked white rice (for serving)

Directions

Step 1

Season the chicken pieces with salt and black pepper. Set aside.

Step 2

Heat the cooking oil in a large, heavy-bottomed pot or Dutch oven over medium-high heat.

Add the chicken pieces skin-side down and sear for 3-4 minutes on each side until golden brown. Remove the chicken from the pot and set aside.

In the same pot, lower the heat to medium and add the sliced ginger, smashed garlic, and star anise. Sauté for 1-2 minutes until fragrant.
