  • 1 lb chicken thighs (boneless, skinless)

  • 2 medium tomatoes (diced)
  • 1 cup coconut milk
  • 2 tbsp vegetable oil
  • 1 tsp cumin seeds
  • 1.5 tsp ground coriander
  • 0.5 tsp turmeric powder
  • 1 tsp chili powder
  • 1 tsp garam masala
  • 1 tsp salt
  • 0.5 cup water
  • 2 tbsp fresh cilantro (chopped, for garnish)
  • 1 tbsp lemon juice

Directions

Step 1

Cut the chicken thighs into bite-sized pieces and set aside.

Step 2

Heat the vegetable oil in a large pan over medium heat. Add the cumin seeds and sauté until they start to sizzle and release their aroma, about 30 seconds.

Add the chopped onion and cook until softened and golden brown, about 5-7 minutes.
