  • 12 ounces fusilli pasta
  • 2 pieces chicken breast
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup fresh blueberries
  • 2 cups baby spinach
  • 1 medium red bell pepper
  • 0.5 medium red onion
  • 0.5 cup plain Greek yogurt
  • 0.25 cup mayonnaise
  • 1 tablespoon honey
  • 2 tablespoons lemon juice
  • 0.5 teaspoon garlic powder

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the fusilli pasta according to the package instructions until al dente. Drain and rinse with cold water to stop cooking. Set aside.

Step 2

Season the chicken breasts with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper. Heat 1 tablespoon of olive oil in a skillet over medium heat.
