  • 2 tablespoons Unsalted butter
  • 1 medium (diced) Yellow onion
  • 1 medium (diced) Green bell pepper
  • 2 diced Celery stalks
  • 4 cloves (minced) Garlic
  • 28 ounces Canned crushed tomatoes
  • 1 cup Chicken broth
  • 2 teaspoons Hot sauce
  • 1 teaspoon Dried thyme
  • 1 teaspoon Dried oregano
  • 1 whole Bay leaf
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 12 ounces Pasta (linguine or spaghetti)
  • 2 tablespoons (chopped, for garnish) Fresh parsley

Directions

Step 1

Slice chicken breasts into bite-sized pieces and toss them with Cajun seasoning in a large bowl.

Step 2

Heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Sear the chicken pieces until browned and cooked through, about 4-5 minutes per side. Remove chicken from the skillet and set aside.

Step 3

In the same skillet, add the remaining 1 tablespoon of olive oil and 2 tablespoons of butter. Once melted, sauté the diced onion, green bell pepper, and celery for 5 minutes, until softened.
