Ingredients

  • 750 grams Chicken (bone-in or boneless, cut into medium pieces)
  • 3 large Onions (finely sliced)
  • 3 medium Tomatoes (finely chopped)
  • 2 tablespoons Ginger-garlic paste
  • 3 tablespoons Plain yogurt
  • 4 tablespoons Vegetable oil
  • 1 teaspoon Cumin seeds
  • 0.5 teaspoons Turmeric powder
  • 1 teaspoon Red chili powder
  • 1.5 teaspoons Coriander powder
  • 1 teaspoon Garam masala powder
  • 1 teaspoon Salt
  • 3 tablespoons Fresh cilantro (chopped)
  • 200 milliliters Water

Directions

Step 1

Heat the oil in a large pan or wok over medium heat.

Step 2

Add cumin seeds and let them sizzle for about 30 seconds until aromatic.

Step 3

Add the sliced onions and sauté until golden brown, which should take 8-10 minutes.

Step 4

Stir in the ginger-garlic paste and cook for 1-2 minutes until the raw smell disappears.

Step 5

Add the turmeric powder, red chili powder, and coriander powder. Stir well to coat the onions in the spices.

Step 6

Add the chopped tomatoes and cook until they break down and the oil starts to separate from the mixture, about 8 minutes.

Step 7

Whisk the yogurt to remove lumps and add it to the pan. Cook for another 3 minutes, stirring well.

Step 8

Add the chicken pieces and stir to coat them in the masala. Cook for 5 minutes, stirring occasionally.

Step 9

Pour in the water, cover with a lid, and let the chicken simmer on low heat for 20 minutes or until fully cooked and tender.

Step 10

Stir in the garam masala powder and salt, adjusting the seasoning if needed.

Step 11

Cook uncovered for another 5 minutes to thicken the gravy to your desired consistency.

Step 12

Garnish with freshly chopped cilantro and serve hot with naan or rice.
