Ingredients

  • 4 pieces Boneless, skinless chicken breasts
  • 1 teaspoon Salt
  • 1 teaspoon Black pepper
  • 0.5 cup All-purpose flour
  • 2 tablespoons Olive oil
  • 2 tablespoons Unsalted butter
  • 1 whole Red bell pepper, sliced thinly
  • 1 whole Yellow bell pepper, sliced thinly
  • 1 large White onion, sliced
  • 8 ounces Cremini or white button mushrooms, sliced
  • 4 cloves Garlic, minced
  • 0.75 cup Marsala wine
  • 0.5 cup Chicken broth
  • 2 tablespoons Fresh parsley, chopped

Directions

Step 1

Season the chicken breasts on both sides with 1 teaspoon of salt and 1 teaspoon of black pepper.

Step 2

Dredge the chicken breasts in the all-purpose flour, shaking off any excess flour.

Step 3

In a large skillet, heat 2 tablespoons of olive oil and 1 tablespoon of butter over medium-high heat.

Step 4

Add the chicken breasts to the skillet, cooking for 4-5 minutes on each side until golden brown. Remove the chicken from the skillet and set aside.

Step 5

Reduce the heat to medium and add the remaining 1 tablespoon of butter to the skillet.

Step 6

Add the sliced red bell pepper, yellow bell pepper, and onion to the skillet. Sauté for 4-5 minutes until the vegetables begin to soften.

Step 7

Add the sliced mushrooms and minced garlic. Cook for an additional 3-4 minutes until the mushrooms are tender and fragrant.

Step 8

Pour in the Marsala wine and chicken broth, scraping any browned bits from the bottom of the skillet with a wooden spoon.

Step 9

Return the chicken breasts to the skillet, nestling them into the sauce and vegetables.

Step 10

Cover the skillet and simmer on low heat for 15-20 minutes, until the chicken is fully cooked and reaches an internal temperature of 165°F (74°C).

Step 11

Sprinkle the dish with fresh parsley for garnish.

Step 12

Serve the chicken with the Marsala sauce and vegetables over your choice of mashed potatoes, rice, or pasta.
