Ingredients

  • 500 grams Chicken thighs (boneless, skinless)
  • 500 grams Beef sirloin (thinly sliced)
  • 120 ml Soy sauce
  • 2 tablespoons Brown sugar
  • 3 cloves Garlic (minced)
  • 1 teaspoon Ginger (grated)
  • 2 tablespoons Lime juice
  • 2 tablespoons Vegetable oil
  • 1 teaspoon Chili paste (optional)
  • 20 pieces Wooden skewers (soaked in water for 30 minutes)
  • 180 grams Peanut butter (smooth)
  • 200 ml Coconut milk
  • 2 tablespoons Soy sauce (for sauce)
  • 1 tablespoon Brown sugar (for sauce)
  • 1 teaspoon Chili flakes (for sauce)
  • 60 ml Water (to adjust sauce consistency)

Directions

Step 1

Cut the chicken thighs and beef sirloin into bite-sized pieces, about 1 inch in size.

Step 2

In a large bowl, mix together soy sauce, brown sugar, minced garlic, grated ginger, lime juice, vegetable oil, and chili paste (if using) to create the marinade.

Divide the marinade evenly between two bowls. Add the chicken to one bowl and the beef to the other, ensuring all pieces are well coated. Cover and refrigerate for 30 minutes to 1 hour.

While the meat marinates, prepare the spicy peanut sauce. In a saucepan over medium heat, combine peanut butter, coconut milk, soy sauce, brown sugar, and chili flakes. Stir constantly until the mixture is smooth and slightly thickened. Add water little by little to adjust the sauce to your desired consistency. Remove from heat and set aside.

Thread the marinated chicken pieces onto half of the soaked skewers and the marinated beef pieces onto the remaining skewers.

Preheat a grill or grill pan over medium-high heat. Lightly oil the grates to prevent sticking.

Grill the skewers for about 8-10 minutes, turning occasionally, until the chicken is fully cooked and the beef is tender. Make sure the chicken reaches an internal temperature of 75°C (165°F) for safety.

Once cooked, remove the skewers from the grill and let them rest for 5 minutes.
