  • 15 ounces cooked cannellini beans (drained and rinsed)
  • 6 cups chicken broth (low sodium)
  • 1 teaspoon dried thyme
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 leaf bay leaf
  • 2 cups spinach (chopped)
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Season the chicken breast with a pinch of salt and pepper, then add it to the pot. Sear on both sides until lightly browned, about 4 minutes per side. Remove the chicken and set aside.
