Ingredients

  • 2 pieces Boneless, skinless chicken breasts
  • 1 can (15 oz) Black beans (drained and rinsed)
  • 1 can (10 oz) Diced tomatoes (with green chilies, undrained)
  • 1 cup Corn (frozen or canned, drained if canned)
  • 1 packet (1 oz) Taco seasoning mix
  • 0.5 cup Chicken broth
  • 8 pieces Flour tortillas (large)
  • 1 cup Shredded cheese (cheddar or Mexican blend)
  • 0.5 cup Sour cream
  • 0.25 cup Chopped fresh cilantro (optional, for garnish)

Directions

Step 1

Place the boneless, skinless chicken breasts in the bottom of a crock pot.

Step 2

Add the black beans, diced tomatoes with green chilies, corn, and taco seasoning mix on top of the chicken.

Step 3

Pour the chicken broth over the mixture to ensure it stays moist as it cooks.

Step 4

Cover the crock pot with the lid and set it to cook on low heat for 6-8 hours, or on high heat for 3-4 hours.

Step 5

Once the cooking time is complete, use two forks to shred the chicken directly in the crock pot. Mix everything together so that the flavors combine well.

Step 6

Warm the flour tortillas in a microwave or on a skillet.

Step 7

Spoon the chicken and bean mixture into the center of each tortilla. Top with shredded cheese, sour cream, and optional chopped cilantro.

Step 8

Roll up the tortilla into a burrito, tucking in the sides as you roll. Repeat with the remaining tortillas.

Step 9

Serve immediately while warm and enjoy!
