Ingredients

  • 2 pieces Boneless, skinless chicken breasts
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 3 tablespoons Olive oil
  • 3 cloves Garlic cloves, minced
  • 0.5 cup Sun-dried tomatoes, chopped
  • 1 cup Heavy cream
  • 0.5 cup Grated Parmesan cheese
  • 0.25 cup Fresh basil leaves, chopped
  • 12 ounces Pasta (e.g., penne or fettuccine)
  • 0.5 cup Chicken broth
  • 0.25 teaspoon Red pepper flakes

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Drain and set aside, reserving 1/4 cup of pasta water.

Season the chicken breasts with salt and black pepper on both sides.

Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the chicken breasts and sear for 5-6 minutes on each side or until fully cooked. Remove the chicken from the skillet, let rest for a few minutes, then slice into strips.
