  • 0.75 cup Pearled barley
  • 1 tablespoon Chili powder
  • 1 teaspoon Ground cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 2 tablespoons Fresh cilantro, chopped (optional for garnish)
  • 0.5 cup Cheddar cheese, shredded (optional for garnish)
  • 0.25 cup Sour cream (optional for garnish)

Directions

Step 1

Heat 2 tablespoons of olive oil in a large pot or Dutch oven over medium heat.

Cut the chicken breasts into bite-sized pieces and season with a pinch of salt and pepper.

Add the chicken to the pot and sear until lightly browned on all sides, about 5-6 minutes. Remove and set aside.
