  • 2 baguettes, split lengthwise
  • 80 ml mayonnaise
  • 1 medium daikon radish, julienned
  • 1 large carrot, julienned
  • 60 ml rice vinegar
  • 25 grams granulated sugar
  • 5 grams salt
  • 1 medium cucumber, thinly sliced
  • 30 grams fresh cilantro
  • 1 fresh jalapeño, sliced

Directions

Step 1

In a medium bowl, mix soy sauce, fish sauce, lime juice, brown sugar, and garlic together to create the marinade.

Step 2

Add chicken thighs into the marinade, covering them well. Let them marinate in the refrigerator for at least 30 minutes.

Step 3

In a separate bowl, mix julienned daikon and carrot with rice vinegar, granulated sugar, and salt. Let it sit for 30 minutes to pickle.
