  • 6 pieces Bone-in, skin-on chicken thighs
  • 8 whole Shallots
  • 0.5 cup Pitted green olives
  • 6 sprigs Fresh thyme
  • 4 cloves Garlic
  • 3 tablespoons Extra-virgin olive oil
  • 0.5 cup Chicken broth
  • 0.5 cup Dry white wine
  • 1 teaspoon Salt
  • 0.5 teaspoon Freshly ground black pepper
  • 1 whole Lemon (zested and juiced)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Pat the chicken thighs dry with paper towels and season them on both sides with salt and pepper.

Step 3

Peel the shallots and cut any large ones in half. Leave smaller shallots whole for a rustic look.

Heat 2 tablespoons of olive oil in a large oven-safe skillet or sauté pan over medium-high heat.
