Ingredients

  • 400 g Penne pasta
  • 2 pieces Chicken breast
  • 150 g Bacon
  • 2 tbsp Olive oil
  • 4 pieces Garlic cloves
  • 400 g Canned diced tomatoes
  • 1 cup Heavy cream
  • 6 pieces Fresh basil leaves
  • 1 cup Parmesan cheese, grated
  • 1 tsp Salt
  • 1 tsp Black pepper
  • 0.5 tsp Red pepper flakes
  • 0.5 cup Chicken broth (optional)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the penne pasta according to the package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.

Step 2

While the pasta cooks, cut the chicken breasts into bite-sized pieces and season with a pinch of salt and pepper. Chop the bacon into small pieces as well.

Step 3

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the bacon and cook until crispy, about 5-7 minutes. Remove the bacon with a slotted spoon and set aside on a plate lined with paper towels.

Step 4

In the same skillet, add the chicken pieces and sear them in the bacon fat until cooked through and golden brown, about 6-8 minutes. Remove the chicken and set aside with the bacon.

Add the remaining 1 tablespoon of olive oil to the skillet. Mince the garlic cloves and sauté them in the skillet for about 1 minute until fragrant.

Add the cooked chicken and bacon back into the skillet, along with the drained penne pasta. Toss everything together to coat the pasta evenly in the sauce.

Chop the fresh basil leaves and stir them into the pasta just before serving.
