Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it with cooking spray.
Lay the chicken breasts flat on a cutting board. Using a sharp knife, carefully cut each breast horizontally to create a thinner, more even layer, but do not cut all the way through. Open each piece like a book.
