Ingredients

  • 2 pieces Chicken breast
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 6 cups Mixed salad greens
  • 1 cup Strawberries
  • 1 large Avocado
  • 0.5 cup Feta cheese
  • 0.5 cup Pecans
  • 2 tablespoons Balsamic vinegar
  • 1 tablespoon Honey
  • 0.5 teaspoon Dijon mustard
  • 1 tablespoon Lemon juice

Directions

Step 1

Preheat a grill or grill pan over medium-high heat.

Step 2

Brush the chicken breasts with 1 tablespoon of olive oil and season with salt and black pepper on both sides.

Grill the chicken breasts for 6 minutes on each side, or until fully cooked with an internal temperature of 165°F (74°C). Set aside to cool slightly, then slice into thin strips.

Meanwhile, wash and dry the mixed salad greens, and place them in a large serving bowl.

Hull and slice the strawberries, then add them to the salad greens.

Cut the avocado in half, remove the pit, and scoop out the flesh. Slice the avocado into thin slices and add to the salad.
