Ingredients

  • 3 pieces Boneless, skinless chicken breasts
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 1 14-ounce can Canned artichoke hearts (quartered)
  • 4 ounces Cream cheese
  • 0.5 cup Sour cream
  • 0.25 cup Mayonnaise
  • 0.5 cup Parmesan cheese (grated)
  • 2 cloves Garlic (minced)
  • 1.5 cups Mozzarella cheese (shredded)
  • 0.5 cup Panko breadcrumbs
  • 2 tablespoons Butter (melted)

Directions

Step 1

Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish and set aside.

Step 2

Season the chicken breasts with salt and black pepper on both sides.

Step 3

Heat olive oil in a large skillet over medium heat. Sear the chicken breasts for 3 minutes per side until golden brown but not fully cooked through. Remove from the skillet and set aside.

Drain the canned artichoke hearts and gently pat them dry with paper towels. Arrange the artichokes on the bottom of the prepared baking dish.
