  • 4 pieces Boneless, skinless chicken breasts
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 cup All-purpose flour
  • 2 tablespoons Olive oil
  • 2 tablespoons Unsalted butter
  • 3 cloves Garlic cloves, minced
  • 0.5 cup Dry white wine
  • 1 cup Chicken broth
  • 2 tablespoons Lemon juice
  • 0.25 cup Sun-dried tomatoes, chopped
  • 0.25 cup Heavy cream
  • 2 cups Fresh spinach leaves
  • 2 tablespoons Fresh parsley, chopped
  • 0.25 cup Parmesan cheese, grated

Directions

Step 1

Season both sides of the chicken breasts with salt and black pepper. Lightly coat them with flour, shaking off any excess.

Step 2

In a large skillet, heat olive oil and butter over medium-high heat. Once the butter has melted, add the chicken breasts and cook for 4-5 minutes per side, or until golden brown and cooked through. Remove the chicken from the skillet and set aside.

Reduce the heat to medium and add the minced garlic to the same skillet. Cook for 30 seconds, or until fragrant.
