Ingredients

  • 500 grams Boneless, skinless chicken breasts
  • 2 medium Zucchini
  • 1 Red bell pepper
  • 3 Garlic cloves
  • 1 tablespoon Fresh ginger
  • 3 tablespoons Black bean sauce
  • 2 tablespoons Soy sauce
  • 1 tablespoon Oyster sauce
  • 1 teaspoon Sriracha or chili garlic sauce
  • 1 tablespoon Cornstarch
  • 75 milliliters Water
  • 2 tablespoons Vegetable oil
  • 2 Green onions (for garnish)

Directions

Step 1

Slice the chicken breasts into thin strips and set aside.

Step 2

Cut the zucchinis into half-moon slices. Thinly slice the red bell pepper. Mince the garlic cloves and grate the ginger. Set aside all prepared ingredients.

Step 3

In a small bowl, whisk together the black bean sauce, soy sauce, oyster sauce, sriracha (or chili garlic sauce), cornstarch, and water. This will be the spicy sauce for the stir-fry.

Step 4

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the chicken strips and stir-fry for 4-5 minutes until they are cooked through and lightly browned. Remove the chicken from the pan and set aside.

Add the remaining 1 tablespoon of vegetable oil to the same skillet. Toss in the garlic and ginger, stirring constantly for 30 seconds until fragrant.

Taste and adjust seasoning if needed. Add more sriracha for extra heat, if desired.

Transfer the stir-fry to a serving plate and garnish with chopped green onions.
