Ingredients

  • 2 pieces Boneless, skinless chicken breasts
  • 12 ounces Ziti pasta
  • 1 pound Asparagus
  • 2 tablespoons Olive oil
  • 2 tablespoons Unsalted butter
  • 3 cloves Garlic cloves, minced
  • 1.5 cups Heavy cream
  • 0.5 cup Chicken broth
  • 1 cup Parmesan cheese, freshly grated
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.25 teaspoon Crushed red pepper flakes (optional)
  • 2 tablespoons Fresh parsley, chopped

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the ziti according to the package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.

Step 2

While the pasta cooks, trim the tough ends off the asparagus and cut the tender stalks into 2-inch pieces. Set aside.

Step 3

Season the chicken breasts generously with half the salt and black pepper on both sides.

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the chicken breasts and cook for about 5-6 minutes per side, or until golden brown and cooked through. Remove chicken from the skillet and let rest for 5 minutes before slicing into thin strips.

Return the sliced chicken, sautéed asparagus, and cooked ziti to the skillet. Toss everything together to coat evenly in the sauce.

Cook for another 2-3 minutes to warm everything through. Taste and adjust seasoning if needed.
