Ingredients

  • 2 pieces Chicken breast
  • 2 tablespoons Olive oil
  • 2 pieces Garlic cloves
  • 1 piece Red bell pepper
  • 1 piece Zucchini
  • 1 piece Carrot
  • 1 cup Couscous
  • 1.25 cups Chicken broth
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Fresh parsley
  • 0.5 piece Lemon

Directions

Step 1

Season the chicken breasts with cumin, paprika, salt, and black pepper on both sides.

Step 2

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the chicken breasts and cook for 5-6 minutes per side, or until golden brown and fully cooked. Remove the chicken from the skillet and set aside to rest.

Step 3

In the same skillet, add the remaining tablespoon of olive oil. Mince the garlic and add it to the skillet, cooking for 30 seconds until fragrant.

Step 4

Dice the red bell pepper, zucchini, and carrot into small pieces. Add them to the skillet and sauté for 5-7 minutes until slightly tender.

Step 5

In a medium saucepan, bring the chicken broth to a boil. Remove from heat and stir in the couscous. Cover with a lid and let sit for 5 minutes.

Step 6

Fluff the couscous with a fork and add it to the skillet with the vegetables. Stir well to combine.

Step 7

Slice the cooked chicken breasts into strips and place them on top of the couscous mixture.

Step 8

Finely chop the parsley and sprinkle it over the dish. Squeeze the juice of half a lemon over the top for added freshness.
