  • 3 cloves Garlic cloves, minced
  • 28 oz Canned crushed tomatoes
  • 1 cup Chicken broth
  • 0.5 cup Dry white wine (optional)
  • 1 tsp Italian seasoning
  • 3 sprigs Fresh thyme sprigs
  • 1 leaf Bay leaf
  • 16 oz Cheese tortellini (fresh or refrigerated)
  • 0.5 cup Parmesan cheese, grated
  • 2 tbsp Fresh parsley, chopped (optional for garnish)

Directions

Step 1

Season the chicken thighs with salt and black pepper on both sides.

Step 2

Heat 1 tablespoon of olive oil in a large skillet or Dutch oven over medium-high heat. Sear the chicken for 3-4 minutes on each side until golden brown. Remove chicken from the skillet and set aside.

In the same skillet, add the remaining tablespoon of olive oil. Sauté the diced onion, bell peppers, and carrot for 5 minutes until softened.
