Ingredients

  • 2 pieces boneless, skinless chicken breasts
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 medium yellow onion, finely chopped
  • 3 cloves garlic cloves, minced
  • 28 ounces crushed tomatoes (canned)
  • 0.5 cup fresh basil leaves, chopped
  • 1 teaspoon sugar
  • 3 tablespoons pine nuts
  • 12 ounces pasta (spaghetti, fettuccine, or penne)
  • 0.25 cup grated Parmesan cheese (optional, for garnish)

Directions

Step 1

Season the chicken breasts on both sides with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper.

Step 2

Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for 4-5 minutes per side, or until golden brown and cooked through. Remove the chicken from the skillet, set aside, and tent with foil to keep warm.

In the same skillet, heat the remaining 1 tablespoon of olive oil over medium heat. Add the chopped onion and cook for 3-4 minutes, stirring occasionally, until softened.

Slice the cooked chicken into thin strips and add it back to the skillet with the tomato sauce to heat through for 2-3 minutes.

Add the drained pasta to the skillet with the sauce and toss to coat. If the sauce is too thick, add a splash of the reserved pasta cooking water.
