Ingredients

  • 2 cups Cooked chicken breast, shredded
  • 8 pieces Flour tortillas
  • 2 cups Enchilada sauce (red or green)
  • 1 cup Cheddar cheese, shredded
  • 1 cup Monterey Jack cheese, shredded
  • 1 cup Queso fresco, crumbled
  • 0.5 cup Sour cream (optional, for serving)
  • 2 tablespoons Fresh cilantro, chopped (optional, for garnish)
  • 2 tablespoons Green onions, sliced (optional, for garnish)
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 tablespoon Olive oil

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

In a large mixing bowl, combine the shredded chicken with 1/2 cup of enchilada sauce, salt, and black pepper. Stir until the chicken is evenly coated.

Step 3

Lightly grease a 9x13-inch baking dish with olive oil.

Step 4

Spread 1/2 cup of enchilada sauce across the bottom of the baking dish.

Step 5

Take a flour tortilla and place about 1/4 cup of the chicken mixture in the center. Sprinkle a small amount of Cheddar and Monterey Jack cheese on top of the chicken.

Step 6

Roll the tortilla tightly and place it seam-side down in the prepared baking dish. Repeat with the remaining tortillas and chicken mixture.

Step 7

Once all the tortillas are tightly packed into the dish, pour the remaining enchilada sauce evenly over the top, ensuring all the tortillas are fully covered.

Step 8

Sprinkle the rest of the Cheddar, Monterey Jack, and queso fresco cheeses on top.

Step 9

Cover the dish loosely with aluminum foil and bake in the preheated oven for 15 minutes.

Step 10

Remove the foil and bake for an additional 10 minutes, or until the cheese is melted and bubbly.

Step 11

Remove from the oven and let the enchiladas cool for 5 minutes before serving.

Step 12

Top with sour cream, chopped cilantro, and green onions if desired. Serve warm and enjoy!
