Ingredients

  • 200 g Cooked chicken breast (shredded)
  • 150 g Canned sweetcorn (drained)
  • 100 g All-purpose flour
  • 2 large Eggs
  • 100 ml Milk
  • 1 tsp Baking powder
  • 1 tsp Garlic powder
  • 1 tsp Paprika
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper
  • 2 stalks Chopped spring onions
  • 3 tbsp Vegetable oil (for frying)

Directions

Step 1

In a large mixing bowl, combine the all-purpose flour, baking powder, garlic powder, paprika, salt, and black pepper.

Step 2

In a separate bowl, whisk together the eggs and milk until well combined.

Step 3

Pour the egg and milk mixture into the dry ingredients and mix until a smooth batter forms.

Step 4

Add the shredded cooked chicken, sweetcorn, and chopped spring onions to the batter and mix gently until evenly combined.

Step 5

Heat a large non-stick frying pan over medium heat and add 1 tablespoon of vegetable oil.

Step 6

Scoop 2-3 tablespoons of the batter per fritter into the pan, flattening slightly with the back of a spoon to shape into rounds.

Step 7

Cook the fritters for 3-4 minutes on each side, or until golden brown and cooked through. Repeat in batches, adding more oil as needed.

Step 8

Transfer the cooked fritters to a plate lined with paper towels to drain excess oil.

Step 9

Serve warm, optionally garnished with additional spring onions or a dipping sauce.
