Ingredients

  • 1.5 pounds Boneless, skinless chicken thighs
  • 2 large (about 1.5 pounds) Sweet potatoes
  • 2 tablespoons Olive oil
  • 1 medium, diced Yellow onion
  • 3 minced Garlic cloves
  • 1 tablespoon, grated Fresh ginger
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 1 teaspoon Ground paprika
  • 1 cup Coconut milk
  • 1 cup Chicken broth
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Chopped fresh parsley or cilantro
  • 1 tablespoon Lime juice

Directions

Step 1

Peel and cut the sweet potatoes into 1-inch cubes and set aside.

Step 2

Heat olive oil in a large pot or Dutch oven over medium-high heat.

Season the chicken thighs with a pinch of salt and pepper and sear them for 3-4 minutes on each side, until golden brown. Remove the chicken from the pot and set aside.
