  • 2 large Eggs
  • 1 cup Breadcrumbs
  • 0.5 cup (grated) Parmesan cheese
  • 0.5 cup All-purpose flour
  • 1 cup (for frying) Vegetable oil

Directions

Step 1

Peel and cube the sweet potatoes, then boil them in salted water for 15 minutes or until tender. Drain and mash until smooth. Set aside to cool slightly.
